OMG, how simple is this? We have no excuses not to eat healthy when we can pull together dinner this easy on a busy night. It looks like a rainbow with all the beautiful colors. And the flavors from those earthy vegetables blend so perfectly together. This easy recipe uses only a sheet pan to prepare. She adds chopped Brussels sprouts, diced sweet potato, red onion, all mixed in olive oil.
Then, she adds chicken breasts seasoned with a blend of dijon mustard and maple syrup. Yummy! Although she doesn't tell us, we would guess this meal cooks at around 425 degrees for 25-30 minutes. You can serve this beautiful dish immediately or you can make individual servings to enjoy all week. If you’re not counting carbs, this meal would accompany quinoa or rice nicely. We think a warm, soft dinner roll with melted butter would be the perfect companion for this meal.
