This gorgeous salad is made with spring mix, 1/4 cup diced red onion, a handful of chopped walnuts, one thinly sliced green apple and two thinly sliced fennel bulbs. That sounds so yummy! The homemade, refined sugar-free dressing is made with 1/4 cup olive oil, 2 tablespoons white balsamic, 1 teaspoon dijon mustard, and salt to taste. Sounds amazing to us!
