Wow, that is quite a soup, even without meat or dairy. This soup won't leave you feeling hungry. She starts this nutritious meal by adding diced onions, celery, and carrots to the crockpot. Then she adds minced garlic and diced sweet potatoes. Yum! Next, she adds rinsed lentils and garbanzo beans. For spices, she’s adding turmeric, coriander, cumin, black pepper, cayenne, and a dash of cinnamon. Then, she adds a little salt and veggie broth to cover the beans and vegetables. She sets it on high for 4 hours, or you also can set it on low, and let it cook all day. Before serving, she adds chopped kale, fresh lemon juice, and salt to taste. This sounds absolutely delicious!
